Baked Lemon Chicken and Rice


Baked Lemon Chicken and Rice

Ingredients
6 pieces of chicken (breasts, thighs or a combination), not frozen
salt and pepper (or a good chicken seasoning!)
Extra Virgin Olive Oil 
1 onion, chopped
1 cup of uncooked rice (I used brown rice)
2 1/2 cups of chicken stock if using brown rise only 2 cups if using white rice
2 lemons (you will need the zest and juice from one and the other, sliced)
chopped rosemary

Preheat oven to 350 degrees.
Season your chicken with salt and pepper pretty liberally on both sides.  Next, in a large (oven-safe pan), brown up your chicken over medium-high heat in a drizzle of EVOO.  Brown each side 4 to 6 minutes.  Once your chicken is browned, remove from pan to a plate for just a moment.  Return to your hot skillet and add in another drizzle of EVOO along with your onion and a pinch more salt and pepper.  Saute until onion becomes tender.  After that, add your chicken back into your pan followed by your rice, stock, and the zest and juice of one lemon.  Bring everything up to a boil.  Next, slice your second lemon and add it to your pan followed by a sprinkle of rosemary.  At this point, COVER pan and pop your chicken and rice into the oven and bake about 20 -30 minutes.  Check to see if rice is cooked through.  If rice is tender then it's done . . . If not keep cooking 5 minutes until rice is finished cooking.  You might need to add more chicken broth if you need to cook longer.

Spinach Jack Tacos

My husband and I love Mexican good and I mean LOVE it, so when I saw this recipe for Spinach Jack Tacos I new we had to try it.  🌮❤️   I was wondering how the combination of spinach and jack cheese in a taco would be so I had to find out right away. 🌮❤️   Well, yesterday evening I made them and then served them outside on our back pool patio. Ingredients 
1 pound ground beef
EVOO Extra Virgin Olive Oil
dash of salt and pepper
1 packet of taco seasoning I like the ones WITHOUT MSG
1 4oz can of chopped green chiles
1 10oz package of chopped frozen spinach
2 cups salsa
1 package of hard taco shells. (I used the Stand and Stuff)
2 cups Pepper Jack Cheese or Monterey Jack if you don't want the extra kick
chopped green onions or cilantro to garnish (optional)





Directions
Preheat over to 400 degrees and lightly spray your 8 x 8 baking dish with cooking spray and set aside.  
In a skillet over medium high heat brown your ground brief in a little EVOO.  Once it's crumbly and brown, add a dash of salt and pepper and then the taco seasoning.  Then stir in the chopped green chiles, spinach and salsa.  Simmer everything for about five minutes.  Then, take each taco shell and stuff them with the taco mixture.  Place each stuffed taco in the baking dish.  Once they are all stuffed sprinkle the cheese on the tops of them.  Bake for 14 minutes or until the cheese is golden and bubbly.  When you serve the tacos you can add green onion or cilantro for garnish.  They are definitely the BEST Taco's Ever!  Thank you MIXANDMATCHMAMA!!

Fast and Easy Herbed Chicken with Veggies

Ingredients 

  • 2 tablespoons oil 
  • 1 1/2 pounds chicken tenders, thighs or breasts (I used thighs)
  • 1 medium onion, chopped 
  • 1 can (14 1/2 ounces) diced tomatoes, undrained 
  • 1/4 cup water (I didn’t need the water so I didn’t add it)
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt 
  • 1 package (6 ounces) baby spinach leaves 
  • Crumbled Feta Cheese
    Add oil to large skillet on medium high heat.  Add chicken and brown each side for 5 minutes.  Add onion.  Cook and stir for ten minutes or until softened.  Stir in tomatoes, water and seasonings.  Bring to boil stirring occasionally.  Reduce heat to low, cover and simmer for three minutes.  Stir in spinach and cook for 2 minutes or until spinach begins to melt.  I add feta cheese once it's finished or once it's plated depending on who likes it.  This was SO good and SO easy!   Let me know if you give it a try.
