O'Henry Bars

I'm not sure about you but I save certain recipes to make only during the holidays.  Many years ago during the Christmas season we were at my sisters home and she had made these bars called O'Henry Bars.  I LOVED them and so I began making them every Christmas season too.  They are very easy to make and they are a no bake recipe.  They are always a hit here every year and it's something we look forward to every December as a yummy Christmas treat.

O'Henry Bars

Ingredients
1 cup Dark Karo Syrup
1 cup white sugar
1 1/3 cups Creamy Peanut Butter
6 cups Special K Cereal
2 cups chocolate chips
2 cups butterscotch chips
parchment or wax paper

Directions
In a large bowl put the Special K Cereal and set aside..  Then in a saucepan put the peanut butter, sugar and Dark Karo Syrup.  Cook over medium heat until all are nicely blended together.  Then bring to a boil and then immediately remove from heat.  Pour mixture into the large bowl with the cereal and mix together.  . . I use a rubber spatula and mix until cereal is covered.  Get a 9 x 13 baking dish and put the mixture into it.  I use a piece of wax paper or parchment paper to push the mixture into the pan and to spread around evening.  Set the pan aside.
Then take another sauce pan and put in the the chocolate and butterscotch chips.  Melt VERY SLOWLY over low heat.  You need to watch the pan at all times so it doesn't over cook which will make everything grainy.  Keep stirring until the chips melt.  Then spoon melted chips on to the mixture in the 9 x 13.  I use a plastic spatula to spread it around evenly.  I then put it in the fridge for 30 minutes to an hour to harden up.  Take out of fridge and then you can keep it out at room temperature.  IT does NOT need to be refrigerated. I like to use a small metal spatula to serve and just an FYI - these are rich so small square pieces are best.  Please let me know if you try it and how you like it.

Enjoy,  Emily

Chicken Tortilla Soup

There is a huge cold front that is crossing our country this week and I know we here in the south are cheering and saying HOORAY!  Even here in Florida we are going to see highs in the 50's and lows in the 30's . . .and that my friend is COLD for us.  When the temps drop I crave warm home cooked meals such as soups, stews and chili.  If you are looking for a very easy recipe that is SO YUMMY I have just the one that I think you will love.  Many years ago I use to blog and I mean I blogged every day faithfully.  My former blog was about having and raising our five children, home schooling, my love of Bare Minerals,  and being in full time ministry.  I also shared my love of cooking and baking.  I shared this recipe years ago and this is the honest truth I still have people contacting me saying they still serve this soup to this day.  I know you are going to LOVE it.  Let me know if you every try it and what you think.

Chick Tortilla Soup

Ingredients
32 ounces of chicken broth
2 cans refried beans
2 cans black beans
2 cups of chicken cubed (I purchase a rotisserie from the grocery)
2 cups of corn
2 cups of salsa (I used medium but feel free to use MILD or HOT)
1 cups of water
2 cups shredded cheddar cheese
Tortilla Chips

Put everything in to a soup pot or dutch oven EXCEPT the cheese and tortilla chips.  Cook on low-medium for about 10 minutes or until hot.  Remove from heat and stir in the shredded cheese.  When you serve add tortilla chips and even a dollop of sour cream if you want.

Enjoy it!
Emily

Friday Favorites

It’s Friday so that means it’s time for my Friday Favorites!! If you are looking for a great gift for someone who travels a lot or who loves music or loves to watch movies on their computer or other device then I have the perfect holiday gift for you. ❤️🎁 Last year for Christmas I purchased these exact headphones for my husband and ended up purchasing a pair for myself too because I was seeing just how much he enjoyed using them and the quality just can’t be beat. They are a little pricey but they are by far the best headphones you will find and they make an AWESOME gift.   I linked the exact pair that we purchased and a few other models that are by the same company but priced lower. ❤️🎁

My Newest Obsession For Our Christmas Tree

These clip-on candles are my newest obsession. I have always loved the way real candles look on trees but would never ever do it because of the fire hazard but when I found these and read the reviews on them I bought them immediately for our tree this year. I put them on the tree the other day and I LOVE THEM. ❤️💚 They come 12 in a pack and they work with a remote control. Each clip on light works with one AAA battery. What’s cool is I purchased 2 packs for our tree and the same remote works for both packs.
Also, the candles swivel so once they are on the tree you can position them perfectly. This is my favorite Christmas decor purchase for this year. I’ll do an Instastory so I can demonstrate how they look a little later today. Also, I purchased mine from a website that is SOLD OUT now BUT I found the exact ones by the same company on a different website for almost half the price that I paid. ❤️💚For shopping details look under this photo.

Print Jogger Pants And When A Necklace Can Be A Scarf Alternative!

Can you believe it’s heading back up near 80 degrees here in Central Florida? Thank goodness the weather app is telling me the low to mid 70’s are coming starting on Friday. 🙌🏼 So, in honor of summer temps I’m back in short sleeves with this high low tunic which was a perfect canvas for my new accessory from @sugarfix . 🌺 I love the multi length layers of Pretty berry colored beads. Remember necklaces can be your scarf alternative if it’s too warm to wear a scarf. For this looks details look under the bottom photo of this post.

Sunday Morning Moment

I found this butterfly who had gone to butterfly heaven out on our pool deck. As I really got a good look at him and then turned it over I noticed it had two complete different looking sides. Which got me thinking.....Have you ever heard the saying there is two sides to every story? It’s really true. How many times has someone come to you with a story ....a problem ... a situation on how someone else had done them wrong? We are quick to listen to the person and quick to respond.  Usually our first reaction is to agree with them.  Then fast forward a week or two or even longer and you happen to see the person who the first person was complaining  about. You get into a conversation and learn that there was more to the story then what you were first told.

There is a good lesson to learn here. In Proverbs 18:17 it says, “The first one to plead his cause seems right, until his neighbor comes and examines him. “  It’s best not to come to a conclusion until you hear the other side.  Here are a few good tips: *It’s good to remind ourselves that we are only hearing one perspective. *Try to remain emotionally detached from what you are being told. *Dont give an immediate response. *Review the facts of the situation or problem. Possibly talk to the other person to hear their side. *Once you do find out the other side get back in touch with the person and share. Possibly bring both parties together.  Many times problems or situations are worked out once you get all the facts together.  So by getting both sides of the story you can avoid saying you are agreeing with the wrong thing which could further complicate things.  It’s easier said than done but with determination and persistence you can do it. Have a blessed day, Emily

Gold . . Gold.. . .Gold . .

My ears are dripping in gold with my gold tassel earrings. 😉💛 I wore them all day one day last week and I have to say I love them. 💛 Our weather here in Central Florida is fickle one day hot, one day warm and one day chilly . . the day I wore this it was rather warm so this gold sleeveless cowl neck top was perfect not only for the weather but it kept me in a warm fall color.   These earrings are sold in a set that come with this exact pair and a dark grey pair for only $20.  They are not heavy and honestly look much more expensive than what they cost.  They would make an excellent gift or a perfect accessory to your holiday looks.  I linked the exact earrings and similar items for the rest of the look. For outfit details see under bottom photo of this post.

A Pop Of Pink And Pretty Ruffles

Another beautiful day here in Central Florida and another print cardigan.  I love this time of year and I also love this camisole with the ruffle hem. I like the way a shorter cardigan like this shows off the ruffles. My fall accessory today is my dark pink crossbody bag with the orange strap. Who says fall style has to be dark colors or neutrals. A bright pop of color is sometimes the perfect thing to add to your fall style. 💗 This look is old except for my bag but I linked similar items so you can recreate this look. Get details under the bottom photo of this post.

The Boyfriend Cardigan

I love boyfriend cardigans for a few reasons but especially because it covers my backside. 😉 There are days I like to switch things up with a striped cardigan and solid tee other than a striped tee and solid cardigan which is normally the way I pair them.  I also love this ‘Y’ necklace that I totally forgot I had.  Don't you just love when that happens.  When it’s 84 degrees this necklace works instead of a scarf. This entire look is old but I linked similar pieces to help you recreate this look. ⚪️🔵 Get full details under the bottom photo of this post.

A Perfect Look For Thanksgiving Day!

How do you dress for fall when it’s back up to almost 80 degrees? The answer is......very strategically! 🍁🍁A knit cardigan layered with a tank or cami is a perfect way to go. It’s layers but light layers so you don’t end up melting from the heat. Also, even though warm temps are back you can still get by the with a pair of booties. This look would also make a perfect Thanksgiving Day outfit!  🍁🍁 I linked exact and similar items so you can recreate this look. 🍁🍁Get the details under the bottom photo of this post.

Sunday Morning Moment

Sunday Morning Moment - When you see a battle on the horizon the best thing you can do is to seek and trust the Lord before you do anything else. Remember who God is, what He has done in your past and what He promised He would do in the future. Keep your eyes on Him and by faith He will see you through. 💚💚💚
"He prayed, “O Lord, God of our ancestors, you alone are the God who is in heaven. You are ruler of all the kingdoms of the earth. You are powerful and mighty; no one can stand against you! 2 Chronicles 20:6
