Finca's Organic Coffee

I’m normally a tea drinker but on occasion I get the craving for a good cup of organic coffee. ☕️ I’d like to introduce you to Finca's Coffee . ☕️ This crisp, smooth. well - balanced 100% organic coffee is from Honduras. ☕️ It’s also a fair trade coffee that helps to create opportunities for small scale producers that live in remote, rural areas, pays a fair price to farmers and producers, invests in improvements in the farmers communities, supports sustainable environmental practices, promotes independence, education and positive work conditions. ☕️

This full bodied medium roast can be found on Amazon.  Click below for direct link.  ☕️

Honey Garlic Chicken Made In The Instant Pot

A few nights ago I made Honey Garlic Chicken in my Instant Pot. It literally made chicken thighs with the bone in 15 minutes. It came out so tender and moist. I was totally amazed and excited at the same time. First that is cooks things fast but also that the food comes out so good. Have you ever heard of an Instant Pot? It’s a pressure cooker but with so much more. It also slow cooks, sautes, steamer, warmer, yogurt maker and rice cooker. You can even make cheese cakes in it.
I posted on my blog the recipe so head over there to check it out. Link is in bio. Also, I linked different models under the recipe for you to check out.

Honey Garlic Chicken Instant Pot Style
Ingredients
  • 2 Tablespoons olive oil or butter
  • 4-6 chicken thighs bone in skin on
  • 2 Tablespoons soy sauce
  • 2 Tablespoons ketchup
  • 2 Tablespoons honey
  • 2 Tablespoons minced garlic
  • Sesame seeds optional for serving
Instructions
  1. Combine the soy sauce, ketchup, honey and garlic.
  2. If you want a crispy skin on the chicken thighs, set the IP to saute and add 1-2 Tablespoons olive oil to the bottom of the pot. Allow to get hot before adding the chicken thighs.
  3. Cook until they release easily from the bottom, about 4-5 minutes, then turn off the IP.
  4. Turn over the chicken thighs and pour the honey garlic sauce all over.
  5. Place the lid on the IP, select "manual" and increase time to 15 minutes.
  6. Quick release and serve with a sprinkle of sesame seeds.

SIDENOTE:  To adapt this recipe for a crockpot . . . Just add the chicken thighs to the bottom of your slow cooker, top with the sauce, and cook on low for 6-8 hours or high for 3-4 hours.
